I was wondering if it’s possible to add rest and tie while I play some chords for recording a polyphonic sequence (as a JX3P)? Or are we obliged to go through the recorded sequence to add them after ?

Maybe this is what Jay-jay meant by “rest” but is it possible to add empty notes while playing?
Also can it record on several different channels in some way? It would be cool to have the sequencer send different notes to different instruments at the same time!

You can do both: add them while recording or later, after recording is done.

Step with no notes is a rest, so yes, you can add them. Multi channel recording is not supported by MidiGAL, this is what MidiREX is for.
